It's something new for me, I recently learned a decent meatball recipe and decided to use it. It brought some variety, and the kids loved it. :)

Chicken:

I used chicken breast, seasoned with salt and pepper, seared in a bit of oil.

Took it out and let it rest while I made the rest.

Couscous:

Basic couscous, cooked in hot water, spiced it with ground cumin, coriander, paprika, cumin seeds, a cinnamon stick, salt and pepper. Let it cool a bit, forked it until fluffy.

Chopped a leftover hot pepper and some mint at the end, after it cooled down.

Salad:

Red onion, red bell pepper, tomato, kalamata olives, feta.

Dressed it with olive oil, lime juice, salt, pepper, and a bunch of fresh parsley.

Took canned chickpeas and roasted them a bit in the chicken pan, added them on top for some crunch.

Had some random stuffed peppers in the fridge so I chucked them in for colour.

It's red onions, tomatoes, red pepper, kalamata olives, feta cheese, fresh parsley, olive oil, lime juice, salt, pepper. I also toasted some canned chickpeas (in the pan where I fried the chicken), for a bit of crunch.

The recipe was a "breakfast sandwich". It was dinner for me.

It's 9pm where I live, this was dinner for us :)

 

breakfast sandwich (?) with seed bagel, bacon, fried egg, cheese, mayo/garlic/sriracha aioli, cabbage, red onion, tomatoes, red peppers. side of home made rustic oregano potatoes and salad.

Cut firm tofu into cubes, pat dry, toss in a bit of cornstarch and fry in a pan with oil til crispy, set aside.

In the same pan, mix up a sauce with 2 spoons soy sauce, 1 teaspoon garlic & ginger paste, 1 spoon of rice vinegar, a bit of brown sugar, and some sriracha (or some hot chili sauce). Let it bubble a bit, then toss the tofu back in, stir it until sticky, viscous. Plate with some sesame seeds.

The shrimp (prawn?) I fried in a bit of oil, for a few minutes on each side, towards the end I added some butter and a couple spoons of garlic & ginger paste. Plate with some chives.
