Maybe some dried petals of a local flower? I know you suggested no organic matter but isn't it very similar to just paper?
A really cool thing would be a tiny mineral collection, imagine sand-speck-sized samples of different minerals.

Not asking for all of that, just I think it's really cool and I'm suggesting a few things and seeing if you like anything
Organics by themselves aren't a deal breaker, and dried petals could work well. One of the main concerns (but not the only) is that an animal ends up in the experiment, and therefore the rocket, because that's a big no-no. Petals are thin, and difficult to hide in. I'll put that on the list of things to maybe send up.
Seems cool in principle, but I'd fear that vibration + tiny rocks could wreck havoc. Maybe if I epoxy the rocks in place? But even then.
