I'm in the U.S. and have a friend that serves court papers for the local county, and when people try this shit the court will often just enter a "not guilty" plea because it's a preliminary hearing.
When trial starts and they try this again, or they just don't show up, is where they start to get in real trouble. He said most of them will change their mind about being sovereign citizen after they start to spend some time in jail.
I am mentis compos, fully competent to handle my own commercial and legal affairs, and I comprehend the nature and substance of this matter.

That second court date is probably to establish fitness to stand trial (sanity in other words lol)
