Roasted aubergine as bread may in fact fuck. Is a loaded baked potato a sandwich? Cause that's where my mind is going with the roasted eggplant. I can make a tomato jam that will knock your socks off and that in a hollowed out roasted eggplant topped with some chunky marinara would be amazing.
