Imo it's more common for 40k fans to fetishize the SoB.
Unfortunately, 40k being what it is, there's almost certainly no textual reference that would reinforce this. There might be some canon gay SoB in one of the novels, but since they're not a major faction (having been dead for like 15 years or something), there just isn't much being written about them. I found a reddit thread saying there are all of 11 full sisters novels. Meanwhile, Gaunt's Ghosts have 16, Ciaphas Cain has 10, and the Heresy is like 60.
Okay so there's no canon lesbians in it, but what's the joke about then? Are they just all women into leather or something?
More or less. They're an all-women religious militant order of "nuns with guns" who were originally designed by british guys in the 80s/90s to look like this:
Like yeah there definitely would be lesbian sisters in such an organization, but because there's nothing canon about it, it's easy for bigots to interpret them however they want.
Also worth noting that the SoB, are space fascists, like all other factions of the Imperium.
