I haven't watched the full thing, but he picked a 3060 TI, I used a 3070 FE for years and it worked just fine for steamvr with my index for beatsaber, Gorn, surgeon simulator, super hot, mini golf, and lots of other games. Both are above the minimum recommended specs for VR so as long as you don't mind adjusting some settings here and there as needed I'm sure it'll do fine.
