I think you're arguing against the most extreme interpretation of what this person said.

To give you an example, I'll show you what it looks like if I were to interpret your comment in the same way:

These are good notes. Just what I was hoping for. I'm using a dutch oven with a splash of water added just before the dough to get it steamy.

• nix the sugar completely
• use at least 50g of starter
• use my hand to mix
• try to resist the urge to add flour

The last point will be the hardest. Every time I've attempted sourdough before this it's been extremely wet, no matter what I do. Like, so wet that the scoring cuts just immediately heal.

I think it would look wrong if the title didn't use title casing.

My solution is to host a virtual machine with my dev workstation, and use Windows or Mac for business admin stuff like email, slack, etc.
