This is what I use! I like that it's privacy-focused, and syncs across my devices. I paid for premium for the extra little bits, but the free version is quite good too.
I use both Obsidian and Joplin. Obsidian for me works as a personal knowledge manager and Joplin for reference stuff. I used to just use Joplin but Obsidian is much more powerful for linking everything together in a zettlekasten way.
I really like the featureset of Trillium, specifically Trillium next, but frankly have not gotten around to setting up on my server, as the mobile app cannot work without a sync server ( to the best of my knowledge ). Coming from Obsidian, I wanted true FOSS and a better way to sync, but turns out it contains essentially all the features I relied on Obsidian plugins for. I could update you once I get around to it, as I think it's a little too soon to make judgement
Fossify notes
I use Apostrophe markdown editor. It's basically a plaintext editor with Markdown syntax highlighting and a rendered preview mode. It is the same formatting language you can use for posts and comments on Lemmy (and the other place).
Honestly, I'm just obsessed with Markdown. You can write it anywhere you can type. It's just structured plaintext that you can easily convert to other formats (html, odf, pdf, etc.) Write it in Notepad. Use it text messages. Put it on Facebook. There is no native support for the format in any of these places, and it doesn't matter.
I do all my writing in Markdown now. It keeps me focused on my document content and structure.
Looks good can I change page colour
I just checked on this. Your display choices in the app are limited to light, dark and sepia. It would be nice if you could enter custom styles for display, but I don't see that option. That might be an interesting feature to contribute---it's FOSS!
As far as styling the converted output, it depends. You can style HTML
with CSS
. Pandoc has options to style other formats with custom templates.

I reallly like Trilian, but if you're looking for something to help your memory, a physical pocket notebook can't be beat. I highly recommend keeping one on hand.

Transitioned fully to obsidian after using OneNote.
I use Logseq
Obsidian Notes. Been a staple of my note taking for a year now, migrated from OneNote. Very few FOSS note programs come close to OneNote.
Obsidian is not foss, Logseq is foss
I just made a group in Signal that only I am a member of, and I take notes there
you don't need to do that signal has a native notes to self function.
i use default MIUI Notes its very good
I use Fast Notepad, since I tried it I never tried any other ones.
I just switched to Trilium from One Note, and it’s pretty great. I’m not sure if this would be overkill if you just need a simple note taking app, but if you are in the market for more robust features, I highly recommend it.

I use Joplin across my android phone and Linux laptops, and then use Syncthing to sync the notes between my devices. Both opensource and both locally synced.
+1 for joplin, switched to it from Google keep a while back in I'm really liking it.
I use vscode (vscodium actually) for my daily tasks, so I use it to keep notes as well. I started using Dendron for a bit of note management, and I push them to my git server from time to time.
Proton docs, it's a feature included with proton drive. Do research and see which ones are E2EE.
And if their servers are based in switzerland...that's the best one

Another vote for obsidian. Plays quite nicely on android as well as the laptop and you can use syncthing to sync them. All for free.
Have they gotten around to letting multiple (even just a +1) users interact with the same obsidian.. database? (Is that the right term?)
