A lot of things they did in thr OG were due to the limitations of what they could do with tech at the time. Like art direction, gameplay, dialog, even fundemental mechanics.
Sterling did a bit on this (not FF) and why a 1:1 isn't necessarily the best route.
To be fair, FF7R isn't just the original game reimagined. Isn't it also a sequel with some some sort of multiverse stuff going on?
With how convoluted and overwrought the expanded FF7 universe is there was probably no chance it was ever going to be a simple retelling of the original story.
Thankfully the FFIX doesn't have tons of indulgent Nomura side projects crowding out the original game
