We'd buy nice bread from the store, organic/no preservatives, so it starts to told mold in 3-5 days unless you freeze it.

Definitely don't do a 1:1 replacement, though, that will be far too sour! I would say start with a tablespoon or so and replace the rest of the liquid with water or stock, then scale up if you want more punch.

This has always been a winner for me, book a nice restaurant or spa day or day trip activities or something during your travels.
