I think they've done a good job picking unique looking people. especially in the ISB boardroom or Narkina 5 where everyone is wearing the same uniform, it's good to have people that are easy to remember.
also good to the see the empire again lead by a coterie of balding men plausibly old enough to be a senior rank like in the original trilogy, compared to the Sequels where the entire military leadership is represented by a 32 year old comic relief character "Hux"
