Remember maybe eight years ago when Apple refused to help the FBI crack an an encrypted iPhone involved in a mass shooting and was super proud and principled about it?

tbf, they are being principled here, they didn't create a backdoor. Also, this only applies to new users, if you were signed on to e2ee before this, this ruling won't affect you. The problem here is the UK government.

They are relaxing security at the demand of the UK so still caved in to demands.

Also, it will affect existing users when it will be turned off for them at a later date.

Where does it say this? I don't think it's technically feasible to turn off Advanced Data Protection for currently existing users without said users losing all their data since Apple doesn't have access to the encryption keys.

Existing users' access will be disabled at a later date.

They can't decrypt existing data as they don't have the keys to do so. However they can turn off the feature so the device once again uploads without encryption.
