I always felt bad for the guy but never did any romancing in Stardew. Is this what happens in game? Or more of a 'head canon' type thing? Would make me happy to know if the dude does get some sort of happy ending, as silly as that sounds.

Yes if you go through his events he starts cleaning up his act and and taking care of the chickens at Marnies farm. It also unlocks the blue chickens.
